What vegan doesn’t have a good parmesan cheese substitute, right? Most of them involve some kind of nut, plenty of nutch, and a pinch of salt. This is no different!
Grated parmesan cheese is a little salty, and is excellent served with pasta. Toast and grind this up and use in the same ways. You could also keep this on hand to pick up your pestos.

Having a fancy pasta party? Keep this on hand to garnish the plates!
- Toast the sesame seeds in a small pan over medium heat, stirring frequently so as to keep them cooking evenly.
- Once the seeds begin to brown, remove them to a plate. Let cool.
- Once cool, add everything to a spice grinder or small food processor and grind to desired consistency. Pulse and check frequently, or the whole thing will become a goopey tahini-nutch mess.
- Use immediately or store in an airtight container in a cupboard away from light and heat.
