To-night, we had so many leftovers from what Ryan cooked earlier in the week that we almost didn’t have to make another round of lunches.
For whatever reason, I had gotten it into my head yesterday that I wanted peanut soup.
(I have no recollection as to why, because all that I would have been pouring over was French cuisine, which definitely doesn’t know what to do with peanuts, much less peanut butter.)
But this is just another lesson that it’s good to act on impulses—because impulses are delicious.
This soup is also super (love bad puns!) easy—a little easier than a curry, which is what it starts out like. If I can prep, cook, and pack it on a weeknight after yoga and grocery shopping, then you don’t have any excuses, either.
