What Vegans Eat: 2013, Week 11, Part 1

This weekend, Ryan and I got our hair cut, which meant that he wanted to eat out for lunch. (If you give a Ryan a hair cut…)

We went to Blue Moon Evolution in Exeter, which is this lovely little locavore restaurant/café. He had a wonderful white bean soup, which was one of the daily specials, and we resolved to make it.

And for some reason, I wanted to make a cream sauce with squash. Yes, I understand that this is the opposite of both the season and the weather.

If you keep reading these posts, then you’ll soon realise how truly random my culinary inspirations are.

  1. Pasta with creamy squash sauce, constructed like Roasted Butternut Alfredo by The PPK (but with a plethora of substitutions)
  2. White bean soup (dried white beans!), with chard and fakin’ bacon
