Spring foods! Green things! Leeks and whatnot!
I got so excited about this chic cabbage soup that I totally forgot to get vegetables for the quiche. In my defense, I did review my vegan quiche recipe and think, ‘Even though I mention it in the post, I should reiterate vegetables in the ingredients so that those making the quiche remember to put them in.’
Except I did this after I had made the grocery list.
So we threw some green onions (new vidalias) in there for onion-Diaya quiche. Yum! And in the spirit of this series, it’s all squished in there like it looks for lunch each day.
- First lunch: Vegan quiche
- Second lunch: Potato, green cabbage, and leek soup from Epicurious, with vegan crème fraîche
