This is late. It almost came on time, but I got distracted somehow. And then it almost came a day late, but I had just finished making and serving a dinner for some lovely ladies, and dessert, wine, and conversation were more fun than a backlit screen.
Amidst all this fun were two awesome lunches. I had a hard time deciding which to eat first. These are both pretty easy and comforting, and would make great weeknight meals as well.
So here’s what we ate the second half of last week:
- First lunch: Drunken noodle, assembled from several recipes and whatever sauce I made up
- Second lunch: Coconut-crusted (Gardein) chicken with roasted red pepper sauce, over coconut rice, somewhat from Epicurious
