I mentioned in my vegan lasagna post the other day that my godmother makes fabulous vegan lasagna, and that it’s a primary motivating factor at family events like Christmas and Easter dinners. Well, Easter having been this last Sunday, Ryan and I are replete with wick flavourful roasted vegetable vegan lasagna!
To complement it, we (okay, Ryan) threw together a simple, fresh three-bean salad.
It finally feels like spring! Now, if only we had some orange wine…
