What Vegans Eat: 2013, Week 15, Part 2

Playing catch-up…

Ryan recently bought Veganomicon,* so we’ve been ogling recipes. First lunch is from there. And my, was it a momentous occasion for our mouths. I love these kinds of hardy, marinated sandwiches—perfect for hiking, picnics, leftovers, all of the good things in life.

Second lunch is a nice use of leftovers itself—that block of tofu in the fridge (marinade it the night before), those lentils that are in the cupboard, those herbs that are hanging out in the fridge, and some vegetables.
