More catching up…
We did some pantry cleaning this weekend (spring!) and tried to figure out what we could make to use up the bits and pieces. Since our pantry consists of one shelf in the cupboard, however (two shelves if you count the baking things like coconut oil), though, there wasn’t much cleaning to do.
So not much of a pretty picture here. Actually, Ryan’s borscht isn’t too bad looking (and everyone at work kept wondering what my awesome pink lunch was).
But my rice and beans are not a beauty contest winner by any extent.
They tasted awesome, though! They had adobo, because apparently something can’t be rice and beans without adobo (although I contend that it’s not called rice and beans and adobo for a reason), an orange pepper, and half a guy of salsa. And that was about the recipe.
