Damn. I just realised that I forgot to mix the arugula into the beet salad.
And on top it will go!
Sigh. The green would have contrasted so nicely.
The remainder of this week shall be a simple, flavourful soup and a lovely bright salad that will turn everything pink and a half.
We’ll see how it goes with the vegan cheeses that I brought in to share at work… I’d make some adjustment, but I’m hoping that the mango pepper jelly will make up for the uncanniness of it all. We’ll see.
The Brie’s a bit coconutty due to using unrefined vs. refined oil, and the sharp cheddar’s a bit oily and soft. Hopefully the latter will improve over the next few weeks for some adventures.
