What Vegans Eat: 2013, Week 18, Part 2

Surprisingly similar formula to our earlier lunch in the week: simple, spicy salad whipped up from memory; more Ottolenghi comfort food.

Only this time, I cooked both. Whilst simultaneously making vegan chili by special request for Hot Dog Day at work. And trying to entertain our Couch Surfer all the while.

It was a busy night. But it ended with vegan pizza and beer, so really, who can complain?

  1. First lunch: Summer Spanish rice salad (coming to a Wicked Good Vegan post near you soon!)
  2. Second lunch: Chermoula aubergine with bulgar and yoghurt, by Ottolenghi via The Guardian (a particularly awesome preparation)
