This was another of those nights when Ryan declares that he’ll just take care of lunches, for any number of reasons.
I’m so lucky to have someone who can make such a mean Dijon vinaigrette…
I argued that first lunch isn’t technically a cassoulet, it’s a cast iron skillet—the theory being that the dish is named after the cooking vessel—but we both determine that cassoulet sounds much nicer. So cassoulet ’tis.
And the only thing that I regret about it? The fact that I didn’t take long enough to make sure that the picture does the perfectly springtime vegetables justice. Seriously, they looked like spring in a pan—it was beautiful.
I see some more leek and whatnot cast iron skillets in our near future.
