What Vegans Eat: 2013, Week 20, Part 1

This installment’s lunches come to you from leftover land.

After a weekend of parties, seeing friends from other cities, and epic homeowner upgrades and yardwork for Mother’s Day, we put together lunches from what was left in the fridge.

If you have a cookout coming up, then I highly recommend this coleslaw…that I promise to post the recipe to soon, and to come back here and update a link when I do.

The tangine has homemade harissa and homemade preserved lemons in it, so suffice it to say that you can’t go wrong with those two ingredients.

  1. First lunch: Vegan coleslaw, no mayo
  2. Second lunch: Vegetable tangine
