What Vegans Eat: 2013, Week 31, Part 2

Today, it’s ways to use that sketchy looking can of chipotle in adobo that’s sitting in your fridge, maybe-maybe-not acquiring botulism.

These are both really good examples of What Vegans Eat—good to throw in the face of people who ask just what we eat and then counter with ‘I thought that vegans didn’t eat anything.’

Just because we look so much better than you doesn’t mean that we starve ourselves.

Fun fact: there’s neither salt nor black pepper in either of these recipes. The chipotle and lime are more than able to stand on their own for flavour. The rice dish is comforting—because what rice dish isn’t?—and would work well with any summer vegetable that’s in season right now (squash, anyone?). And the black bean salad is here almost swimming in a creamy, spicy sauce.

Serve with some nice light lagers or pilsners out on the porch…

  1. First lunch: A Mexican mess, inspired by this Mexican stir-fry (next time, I’d add broccoli)
  2. Second lunch: Black bean salad, with chipotle cream sauce
