What Vegans Eat: 2013, Week 43

So soup season’s officially on. If you can throw it in a pot and cover it with liquid, then you’re in.

The spinach and potato soup is from my backlog of something like 50 recipes that are almost good to go, but haven’t yet gone. Not going is a factor of backend website stuff frustrating me too much to be able to get any other website stuff done (see also: homepage slider).

Alas.

Hopefully some of those will start rolling out soon. It is fall, after all.

In other news, I made vegetable stock this weekend. Commence awesome soups.

  1. First lunch: Vegan wonton soup, from VeganYumYum
  2. Second lunch: Spinach and potato soup (pretty much what it sounds like)
