Ryan’s in England. I’m doing a pretty decent job at feeding myself. I spent the (very, very relaxing) weekend (replete with competition and—more importantly—victory all over the place) in NYC with a friend and can’t believe how far from last week it feels.
My train pulled into South Station just before 2000 last night. Stressing over the fact that NH grocery stores yawn and close shop about that time, I realised with a sweep of calm that I could just get takeout for lunch Monday and grocery shop and cook in the evening.
The World Series in on. Even as I type, we’ve just taken the lead (2-1) and I’m only half paying attention to this post.
Suffice it to say that I was happy to take shortcuts to-night. I think that both of these recipes would be perfect for the newly vegan, wondering what to make. There’s a lot of store-bought stuff, although if you’re feeling fancy, you could easily substitute for the red curry paste and gnocchi with homemade versions.
Or for the decade-long vegan, with one-and-a-half eyes to the television.
Lester is hitting! Hitting! What pitcher does that!? Silly national league.

- First lunch: Red curry with butternut squash and chickpeas, from Epicurious (I stirred some tamarind paste in there for a nice bitter balance)
- Second lunch: Lemon gnocchi with spinach and peas, also from Epicurious (crumbed some Field Roast sausage in there because why not)
