What Vegans Eat: 2013, Week 49

The Germans are coming this week, so lunches will be provided at no expense to me. That said, the work-provided lunches leave little room for creativity and even less for satiation, so I expected to supplement with something of my own.

Literally nothing could be easier than curry.

The recipe is:

  1. Chop some vegetables.
  2. Heat pan. Add fat.
  3. Put onions in the pan first, then peppers, then everything else except greens, which go last.
  4. Before the last vegetables, add curry paste. Add a can of coconut milk if it’s Thai. Stir.
  5. While stirring, realise that you’re done. Enjoy. Maybe over rice, if you remembered to make that whilst cooking curry.

But really. With some curry paste and coconut milk around, all that you have to do is pick up vegetables, and shopping for vegetables is actually really colorful and really fun. (Except maybe when they’re infested with bugs, because anything that can be described as ‘infested’ is gross.)

So suffice it to say that I highly recommend keeping some cans of coconut milk and curry paste around. Patak’s Indian curry pastes are pretty good, too, and don’t even require coconut milk. You can add tofu, tempeh, or other fake meat products as your heart desires.
