This vegan lasagna makes use of a bunch of fresh summer ingredients. It takes a bit of prep, but all of the steps are easy and the end result is oh-so satisfying. Vegetarians beware—this lasagna will make you rethink the notion that you “can’t live without cheese.”
What better use for your new crème fraîche skills than topping some indulgent squash and cheese quesadillas with a spicy, tangy, creamy sauce?
Try these burritos on for size! Instead of spending $8 at the store or $6 at the supermarket, make these for under two bucks each instead. They’re the perfect place for those random vegetable bits and last shreds of Daiya in your fridge, and you’ll find yourself craving one even when you’re not hungry… That reminds me—burritos!
This quiche includes an update to the filling recipe from my Spring Asparagus Quiche. It’s presented in pretty lazy fashion—grab a crust, sauté some veges, and make this filling—but it’s damned good. If you’ve got a little extra time to make brunch or lunch, then roll up your sleeves, dig out the unused veges from your fridge, and make some quiche!
Have leftover pizza dough and don’t feel like making more pizza? Want to jazz up your offerings for a pizza night? Go for a calzone! It’s just like a pizza, only FOLDED IN HALF!
This take on vegan mac+cheese uses Daiya cheddar style shreds instead of a roux-based cheese sauce. The Daiya is creamier and a little more melty/stretchy, and the flavour is much more mild than my other mac+cheese.
What’s in the fridge and pantry that can be combined into a meal? I bet that you have all of these ingredients—or ready substitutes—on hand, and can make a nice, rich, tomatoey and cheesy baked orzo dish!
My friend John always makes spinach-artichoke dip for potlucks, and I told him that I was going to create a vegan version that was even better. I’ve never really had spinach-artichoke dip, but it seems like it’s normally mostly cream cheese and mayonnaise. This spinach artichoke dip isn’t only actually mostly spinach and artichoke, it’s also vegan! Looove you, John…
Happy Vegan Pizza Day, everyone! Here’s my recipe for success: homemade dough; homemade sauce with hand-squeezed tomatoes; and melty, stretch vegan cheese! Just add your favourite toppings and convert any of your vegetarian non-believer friends to the ease of vegan cheese. You can do it!
